Ingredients
- ½ cup old-fashioned rolled oats
- ½ cup milk of choice (2% dairy milk recommended for protein)
- Pinch of salt
- ½ cup fresh or frozen blueberries
- 2 tablespoons cream cheese, softened
- ½ teaspoon vanilla extract
- 1 scoop (approx. 30g) vanilla protein powder
- ½ cup plain Greek yogurt (full-fat or 2%)
- Optional sweetener: 1–2 teaspoons honey, maple syrup, or low-carb sweetener
- Optional toppings: extra blueberries, lemon zest, crushed graham crackers or nuts, almond butter drizzle
Instructions (Stovetop)
- Cook the oats. In a small saucepan, combine rolled oats, milk, a pinch of salt, and sweetener if using. Bring to a gentle simmer, reduce heat to low, and cook for 5 minutes, stirring occasionally, until thick and creamy.
- Burst the blueberries. Stir in the blueberries and cook for 1–2 minutes until they soften and release their juices. Gently mash a few against the pan.
- Melt in the cream cheese. Remove from heat. Stir in the softened cream cheese and vanilla extract until fully melted and smooth.
- Cool slightly and boost with protein. Let the oatmeal cool for 1 minute (to prevent protein clumping). Stir in the protein powder and Greek yogurt until completely combined and silky.
- Serve and garnish. Spoon into a bowl, add desired toppings, and enjoy immediately.
Microwave Instructions
Combine oats, milk, and salt in a microwave-safe bowl. Microwave on high for 2–3 minutes, stirring halfway. Add blueberries and microwave 30 seconds more. Remove and stir in cream cheese, vanilla, protein powder, and yogurt until smooth.
Notes
- Protein count: Using 2% dairy milk, a whey protein scoop (~25g protein), and Greek yogurt (~12g protein), plus oats (~5g), yields approximately 46–47 grams of protein. Plant-based milk and protein powder will alter the total slightly.
- For a fluffier, even higher-protein version, whisk in 1–2 tablespoons of liquid egg whites with the oats before cooking (adds ~4–7g protein).
- The oats thicken considerably upon standing; add a splash of milk when reheating.
